Beer and Brown Sugar Pancakes
Makes 10 to 12 pancakes
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 2 tablespoon brown sugar
- 1 tsp cinnamon
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1 egg, beaten
- 1 cup American lager-style beer
- 2 tablespoons melted butter
- 1/2 teaspoon vanilla extract
- Melted butter or cooking spray, for cooking
Whisk together the flour, sugars, cinnamon, baking powder, and salt in a medium bowl. Make a well in the center of the mixture.
In a small bowl, whisk together the egg, beer, melted butter, and vanilla extract. Pour into the well in the dry ingredients and stir until just combined.
Heat a griddle or large skillet over medium to medium-high heat. Brush with melted butter or spray with oil.
Pour 1⁄4 cup of the pancake batter on the preheated surface.
Allow to cook until bubbles form in the center, flip and allow to cook until golden brown on the underside.
